Ingredients: 500 g ricotta; 150 g parmesan cheese (grated ); 1½ to 2 cups plain flour (plus more for dusting); 2 whole eggs; 2 egg yolks; Black pepper (to taste); 100 g sliced sundried tomatoes; 2 tbsp oil (from sundried tomato jar ); 300 g mushrooms (sliced ); 3 cloves garlic (minced ); 3 tbsp plain flour; 2½ cups milk; 120 g baby spinach; ¼ cup grated parmesan (plus extra to sprinkle on top); ¼ cup pine nuts (toasted ); Salt and pepper to taste; Garlic bread; Leafy green salad
