Ingredients: 2 kg lamb shoulder (bone in (there will be leftovers but who doesn’t like that!)); 4 tbsp olive oil; 4 garlic cloves crushed; 4 garlic cloves halved; 2 red or brown onion (sliced into 3 thick rounds); 2 large carrots (chopped on angle 2cm thick); 2 red capsicum (seeds and stalk removed, cut into 12 pieces (or a punnet of cherry tomatoes)); 2 sprig rosemary; ½ punnet thyme; juice of 2 lemon
